I focus my recipes on “If it ran, swam, grew, or flew…eat it!” Avoiding a much processed and refined foods as possible so that we can get the most nutrition out of our food.
I spent the first 23 years of my life unhealthy and out of shape. Burger and fries? Yes please! What’s a gym? I was a couch potato to the core!
In the summer of 2012 I made some pretty big changes in my life. I left a long term relationship and moved back home to live with my parents. After being home for less than a month, I signed up at my local gym, started working out regularly, and within 8 months I had lost 30lbs! Things were looking up.
It was during these 8 months that I discovered Vegetarianism and my world was opened up. It’s a common misconception that cutting out meat reduces what you can eat, but in reality, it forces you to expand your pallet and try A LOT of new foods.
Today, I’m not a strict vegetarian, but I’ve taken what I learned from that time in my life and still apply the principles of eating as natural a diet as possible with a strong focus on fruits, vegetables, and whole grains.
