Soothing Ginger Soup

You know the drill, you wake up with a bit of a sore throat, then by lunch time you can’t stop coughing and you’ve already gone through half a box of tissues because your nose has decided to turn into a fountain! This soup is simple to make and delicious.

Ingredients 

2 cloves garlic, minced
yellow onion
2 cremini mushrooms
2 cups low sodium vegetable broth
1 cup water
1 cup white kidney beans (canned or cooked)
3 cups chopped bok choy
1 tbsp fresh grated ginger
Salt and pepper to taste
Pasta

Directions

1. In a large saucepan, saute garlic and onion for 5-7 mins or until the onion is translucent.
2. Add mushrooms to the saucepan and saute an additional 2-3 mins
3. Add vegetable broth, water, beans, bok choy, ginger, salt and pepper. Bring to a boil, then reduce heat and simmer for approximately 15 mins.
4. In a separate saucepan, cook pasta according to instructions.
5. Add pasta to the soup and enjoy!
